Incoming US Consul General to Karachi Grace Shelton’s Sweet Potato Recipe!

KARACHI: In a ceremony held here US Envoy David Hale, bidding farewell to outgoing CG Brian Heath, welcomed the incoming Consul General Grace Shelton.

Shelton (who has a Doctor of Law degree earned her Master in International Affairs from Columbia University and BA from Bucknell University) will head the US diplomatic post here in Metropolis for the next couple of years.

Born and raised in Durham, North Carolina, Grace Shelton wanted to be an international banker because she was comfy with economic issues associated with international relations.

Before joining Foreign Service she was an attorney with Bouhan, Williams & Levy in Savannah, Georgia and a law clerk to the Honorable Duross Fitzpatrick, United States District Judge for the Middle District of Georgia.

She brings with her diverse experience. For instance: Political Economic Chief in Ljubljana, Slovenia and Kathmandu, Nepal, General Service Officer in Minsk, Belarus and Political Officer in Kuala Lumpur, Malaysia…

She has also served in Washington, DC as Staff Assistant to the Special Adviser for New Independent States, Georgia Desk Officer, Special Assistant to the Under Secretary for Global Affairs, and Career Development Officer.

Shelton likes to listen to rock music and prefers to read science fiction and mysteries. She is an aficionado of scuba diving, yoga and Pilates. She is also an ‘ace’ chef!

Grace Shelton’s Sweet Potato Recipe

INGREDIENTS: 3 cups mashed sweet potatoes (if using fresh, bake then mash); 1  c. sugar, 1/2 c. milk,  1/3 c. butter,  2 eggs (beaten), 1 tsp. vanilla. [Mix all together & then put in baking dish*]. TOPPING: 1 c. brown sugar, 1 cup chopped pecans, 1/3 c. flour, 1/3 c. melted butter. *METHOD: Mix together & sprinkle on top of mashed potatoes. Bake at 375 for 30 minutes.
